What is the difference between a wood-fired, gas and electric pizza oven?
A wood-fired oven offers live flame as a visual element and traditional artisan baking. A gas oven provides instant start-up, temperature stable to the degree and zero smoke emissions — ideal where control is the priority. An electric oven is the go-to choice for dark kitchens and urban venues without a flue: zero emissions, multi-zone digital control.
What is the difference between a static deck and a rotating deck in a pizza oven?
With a static deck, the pizzaiolo manually rotates each pizza during baking: maximum control, maximum artisan expression. With a rotating deck, the floor rotates automatically, ensuring uniform baking across the whole pizza without constant intervention — ideal for higher-output operations or less specialised teams.
Why are Ceky ovens built with refractory bricks and not cast refractory?
Hand-worked refractory bricks accumulate and release heat more evenly than cast refractory ovens. The 60mm refractory deck — double the standard — guarantees more stable temperatures, more consistent baking and an average service life of over 20 years.
What is the MX Line and when is it better than a gas-only or wood-only oven?
The MX Line integrates a gas burner and a wood combustion chamber in the same cooking cavity. You can work exclusively with gas, exclusively with wood, or with both fuels in combined mode — even within the same service, with no modifications required. The Duetto model adds a small decorative wood brazier; in the standard MX models, the two fuels are fully interchangeable or combinable.
What is the gas conversion kit and which ovens can it be installed on?
The Ceky gas conversion kit is a burner that can be installed on any wood-fired oven — Ceky or other brands — to convert it to gas without replacing the structure. Available in three sizes (CB10E, CB12E, CB14E) with output up to 28.5 kW. Useful for eliminating fire management while keeping the existing oven.
Are Ceky ovens AVPN certified?
Ceky wood-fired, gas, electric static deck and MX Line ovens are certified by the Associazione Verace Pizza Napoletana (AVPN). The certification guarantees that the oven meets the requirements for producing true Neapolitan pizza: baking temperatures, refractory deck materials and cooking chamber structure.
