The decision to use a more expensive material that is more complex to process, is not simply the result of a close bond with our company history, but of precise and scientific evaluation. Our ovens are regularly tested with sophisticated detection systems to verify internal heat absorption and distribution.
When designing the cooking surface of our rotary oven, we decided to make it in such a way as to guarantee constant and even temperatures. Thanks to the quality and thickness of the bricks used, we managed to do so, thus eliminating one of the most significant defects that until now have limited the efficiency of rotary ovens.
The surface does not have to be raised and will not require undesirable pauses between one round of pizzas and the next, because, as demonstrated by our tests, the bricks themselves guarantee even and continuous cooking.
Innovative, technological, functional and now also intelligent, thanks to the digital management of cooking programmes with the Ceky Smart Chef system. The innovative Ceky domestic Oven, the only model with a cooking surface and dome made entirely in refractory brick, combines the advantages of an artisan oven with the practical use and efficient productivity of a rotating surface. The rotary action of the oven allows the operator to load pizzas from the front, considerably simplifying and speeding up their work. The rotary action also improves exposure to heat, accelerating cooking and providing even heat to the entire surface.
As well as the gas burner, which guarantees precise temperatures, an independent electric heating element beneath the rotating surface (which can be switched off or managed either automatically or manually) guarantees constant operation and allows pizzas to be cooked without interruption, and without unwelcome pauses to allow the surface to heat up again.
The Ceky Smart Chef digital control panel, with its simple and intuitive touch screen, synchronises and manages both the direction and speed of rotation and the temperature of the oven, and allows pre-defined cooking programmes to be set for different types of food.
A practical remote control allows the oven’s functions to be controlled from a distance, further speeding up and optimising standard cooking operations.
The software can be easily updated in a few minutes via USB key.
